hee! look at my tubs of ricotta! the awesome fleur from mark communications sent some tubs of Perfect Italiano ricotta cheese for me to try out and the first thing that crossed my mind was bill granger’s famous ricotta hotcakes…

i followed this recipe but minus the honeycomb butter. first, line up your ingredients. it’ll make you feel more organised. i know i sure did. you’ll need: 3/4 cup of milk; 4 eggs, separated; 1 cup plain flour; 1 tsp baking powder; 250g ricotta; butter to oil the pan and a banana

first, place tub of ricotta, egg yolks and milk into a bowl and stir. sift in the flour and the baking powder and stir until just combined

then in another bowl whisk the egg whites until stiff peaks form

fold egg whites through batter in two batches. if you have ever made macarons you will have been told that your mixture should look like ‘magma’. yeah i dunno either. just don’t overstir yeah?

whack in a dollop of your butter to grease your pan and when it’s nice and hot ladle some of your magma mixture in the pan. cook on low to medium heat and flip when you start seeing little bubbles in the hotcake or when it becomes nice and golden underneath

ooh baby! now go forth and multiply and grow your hotcake stack!

when you’ve finished your hotcake mixture give the pan a quick wipe with a paper towel and dollop some butter in and chuck in your halved bananas

i was really sad that i couldn’t make the honeycomb butter so to make myself feel better i made butterscotch sauce! oh man it’s my absolutely favourite sauce evah! the first time i made butterscotch sauce was in a certain pancake restaurant and i was making 5litres of the stuff and i walked away from the pot came back later and the sauce was everywhere hoho lesson learnt- don’t ever leave your sauce alone! so anyways i kinda made up the recipe cos i didn’t have much brown sugar but basically it’s cream, butter, vanilla extract and brown sugar.

ohhh doesn’t that look good. oh wait one more thing!

heh a dusting of icing sugar! the hotcake recipe made about 10 medium sized hotcakes and don’t worry if you can’t finish em all just stick it in the fridge for breakfast the next day =D
