Truffle Hunt and Lunch at Beltana Farm, Canberra

I absolutely hate winter but the one thing I look forward to every year is truffle season. I booked a truffle hunt at Beltana Farm in Canberra where the owner Alice, takes us through the farm which has more than 800 trees. Colin, a fellow farmer and truffle-dog trainer has brought Leroy, a border collie who is dying to get to work and unearth some truffles.
They explained the process of growing and finding truffles as we moved throughout the farm and we were encouraged to ask them any questions. When Leroy found a truffle, Colin would smell the soil before carefully digging and allowing us to get the glory of plucking the truffle from the ground.
We head back to the restaurant for our long lunch and get to see our truffle haul nice and clean and ready to be used in our meal.
We start off with some snacks, the truffle potato scallop is perfectly golden and crisp with a fluffy centre.
The cauliflower, truffle and Comte croquette is also a flavour sensation and the bbq celeriac skewer works so well with the truffle.
Next is a potato damper with macadamia truffle butter and the most beautiful truffle and cuttlefish salami.
The paper steamed john dory with fennel, leek and truffle smells absolutely incredible and the fish is perfectly tender. It came with a potato and truffle bake with truffle cream which was awesome but honestly I would’ve loved a bowl of rice to soak up all the juices.
For mains there was half a farm truffle roasted chicken which was incredibly tender, Jerusalem artichokes with an incredible truffle burnt butter sauce and farm leaves with a truffle vinaigrette.
Finally dessert was a truffle ice cream with a rich malt caramel and burnt white chocolate crumbs. It was a perfect end to an incredible experience.
